Fusilli with cour...This is what we absolutely love:<br />Fusilli with courgettes and tomatoes<br /><br />225g courgettes (eggplants)<br />225g tomatoes<br />175 g fusilli<br />2 tbsp olive oil<br />1 garlic clove<br />salt and pepper<br />6 large basil leaves<br />grated hard cheese of your choice<br /><br />-Boil pasta according to packet instructions.<br />-Meanwhile, heat oil in large saucepan, gently cook chopped courgette and crushed garlic until soft (about 4 mins) add tomatoes (which have been skinned and cut up into chunks) add salt and pepper to taste, heat through.<br />-Drain pasta, add to saucepan, stir it all through, tear in the basil, check the seasoning and serve with grated cheese over the top (optional)<br /><br />This is beautiful served with garlic bread. It tastes very fresh and is perfect for summer! We eat it regularly in our house.Anonymousnoreply@blogger.com
